I use this product for nearly all types of mixing. It works well for cakes, and pancake batter. It does not work very well for heavy yeast doughs. Achieving proper gluten development is an exercise in anger management. In order to get good gluten development you need to run the hook at medium speed. However, running this device with the dough hook at anything above stir with heavy doughs causes the device to shake rattle and roll. unless you hold tight to the device, which gets very hot, it will bounce its way off the counter. <br /><br />Some have said this device is too heavy, imo it is two light and not balanced correctly.<br /><br />With heavy doughs there is no difference in effective speed from 4 to 10. For cake and cookie batter there is a difference.<br /><br />Bottom line this is a great starter level device. If you move into heavy duty bread making, this is not the device for you.

This is my third KitchenAid in the last fifteen years. The first two leaked oil. This one (which I have had about four years) now has no difference in power between level 4 and level 10. I've noticed quite a number of five star reviews have had them for years. Like, I said, what they are now manufacturing ain't your momma's KitchenAid.

Love this mixer! It makes home made bread a breeze! It is super tough and durable! I like it better than the classic because of the extra size of the bowl. If you make bread you will want this size. It is also just of a better quality (enamel accessories, bowl handle)
